Asparagus Nori Wraps

Asparagus is in season tasting as delicious as ever and ridiculously healthy and nutritious! For a vegetable they have a pretty good protein score and are a good source of fibre. Asparagus is high in vitamin K, vitamin A, folic acid and iron, lots of things that we nutritional therapists encourage you to eat. I’ve been using them recently in nori wraps, in fact I took some to my clinic at Urban Bliss on Saturday which went down very well. I like to share lovely healthy and delicious tasting food, so here’s how to make them:

  • 2 spears of asparagus, lightly steamed
  • 2 sheets of Nori
  • brown rice
  • hummus
  • brown rice miso
  • basil & coriander, chopped
  • selection of: avocado, cucumber strips, red pepper, spring onions all sliced thinly

Place the nori sheet shinny side on a rolling mat (you can do without, just do it on a breadboard). Spread the sheet with a thin layer brown rice miso paste. Put a thin layer of brown rice over the sheet, leaving a one inch gap at the top. In the middle, spread a strip (about 2 inches) of hummus across the sheet, place an avocado spear across the sheet then add layers of the other ingredients. Roll the bottom of the sheet up to the middle in the rolling mat, press down, then making sure that the bottom edge of the sheet is tucked in complete the roll firmly and then press down. Then cut into 6 with a sharp knife, it will look like little sushi portions. Repeat with the second sheet and enjoy!
